We’re on the spinach train. It’s the first thing we plant in the spring because it’s so quick to grow. To be honest, it’s not one of our favorites but it’s a quick crop and we like quick crops.

Ingredients:

2 Tbsp grape seed or avocado oil

1 cup onion, chopped

1 Tbsp garlic, minced

1 Tbsp ginger, mince2 tsp ground coriander

1/2 tsp turmeric powder

1/4 tsp white pepper

1 lb spinach, chopped

1 cup water

1tsp salt

1 cup yoghurt
What to do:

Heat oil over medium heat in a large pot.

Add onions and sauté until translucent – 4 to 5 minutes.

Add garlic, ginger and spices – 2 to 3 minutes.

Add spinach, water and salt. Bring to a simmer and cook – 10 to 15 minutes.

Remove from heat, cool and blend until smooth.

Return to pan, heat and simmer – 5 to 10 minutes.

Add a touch more water if the spinach thickens to the consistency of paste.

Remove from heat and blend in yoghurt.

 

Notes:

This a perfect dish with potatoes and rice. Use it as a garnish on top of meat, fish or grilled vegetables.
