INGREDIENTS
5 cups cucumber, peeled, seeded and chopped
1/4 cup water
1/2 cup mild onion, chopped
1/8 cup basil, chopped
1/8 cup mint, chopped
2 TBSP lemon juice
3/4 cup yogurt
Salt and pepper to taste

MEASUREMENT GUIDE
3 tsp = 1 TBSP
2 TBSP = 1 ounce
1 cup = 8 oz
1 cup = 1/2 pint
4 cups = 1 quart
4 quarts = 1 gallon
16 cups – 1 gallon

WHAT TO DO
In two batches, been all of the ingredients until smooth, combine in a bowl and adjust seasoning.

Garnish with a salad of sliced tomatoes, mint and basil.


NOTES
A garnish, while not necessary, makes this soup much prettier.
If you plan to strain the cucumber using the coulis method, you do not need to peel the cucumbers.

MENU SUGGESTIONS
If you are planning on serving this for a brunch or shower, the featherweight nature of cucumber soup really needs to be balanced with something earthy and hearty. Like a BLT. Otherwise, you’re going to watch people teeter over sooner than appropriate.
